The Joy of Food

There seems to be a school of thought that eating healthy nutrition, especially eating a Paleo and low carb diet consists of eating plain boring foods that don’t look very appealing on a paper plate for some reason. We’ve been eating Paleo and low carb for 9 years now and we’ve never ever eaten like that.  It’s not any harder to make great tasting, beautifully presented food than it is to put something into a slow cooker and throw it on a paper plate.  I don’t even really know where that comes from except that a lot of people think cooking for real is hard. I don’t personally have any against slow cooker cooking; I just prefer to not use it.  I’m sure that some folks have had success with it but I’ve just never been able to cook anything that I loved. 

Eating should be a JOY. It’s not JUST about getting the right foods to properly fuel your body for optimum performance. We totally do that. But it’s also about treating yourself with the respect and love that you deserve. For me that means that I care about myself and the people I love to always treat us to delicious meals made with care and presented in a way that expresses that love. That doesn’t mean that I slave and sweat over a stove for hours. In fact, I rarely take more than 30 minutes to pull together a meal.  It also doesn’t mean that I pull out my fancy China for every meal. The only time I do that is for major holidays. Two of my favorite go-to plates are a set from Corelle®, and a plain white that I bought online.

My point is this; eating the right nutrition is a challenge. It requires making some changes in your lifestyle. It takes quite a bit of commitment. So, I have found that the more I enjoy the food AND the experience of eating the easier it is to stick to this commitment. Here’s a whole bunch of pictures of actual food that I cooked and ate.

As you can see it’s a wide variety and all are delicious and plated with thoughtfulness. None of it took hours or lots of effort to make. This lifestyle blog focuses on eating really well.  Meaning that it’s nutritious, delicious and BEAUTIFUL.  I want to share with folks how easy it is to eat great nutrition and enjoy the process.
