Stuffed Fresh Figs with Goat Cheese, Bacon and Peppered Honey

Stuffed Figs.jpg

Fresh figs are so amazing! They taste luxurious so if you can get these fresh that’s going to be best. I have made these with dried figs and they are really good as well. These are great little appetizers for a cocktail party or a dinner a dinner party as a starter. Simple to make and very minimal cooking (just the bacon). Everything can be assembled ahead of time. I also love serving this as part of a Charcuterie board along side cured meats, assorted cheeses and pickled vegetables.

Ingredients

1/4 cup honey

1/2 tsp freshly cracked black pepper

1 tsp sea salt

12 to 16 fresh mission figs (depends on the size)

1/4 cup soft fresh goat cheese (or mashed ripe avocado lightly salted)

2 slices bacon

Directions

Cook the bacon to very crispy, break into 1/4 inch pieces and set aside.  Starting at the stem end, cut each fig into quarters, stopping 1/2 inch from bottom to leave the base intact.  Gently press figs open.  Spoon 1 tsp cheese into center of each.  Arrange figs on platter; insert a piece of bacon into each fig.  Drizzle with honey and sprinkle with sea salt and fresh cracked black pepper.  Can make ahead; store in refrigerator and then serve at room temperature.

Note: Strict Paleo
