Simple, and just simple. Made with ingredients that are staples in most home kitchens. This salad is very light and refreshing so it goes well with heavy entrees to lighten things up. You can also use dried mint if you don’t have fresh.
Ingredients
1 large cucumber split in half, seeded and sliced 1/4 inch pieces
2 stalks of celery sliced 1/4 inch
1/2 small white onion minced
Juice of 1 lemon
2 TBS white vinegar
1 TBS honey
1/2 tsp salt
1/4 tsp black pepper
1 tsp light olive oil
1 TBS finely chopped fresh mint (about 5 leaves)
Directions
Prep cucumber, celery and onions and combine in a large bowl. To make dressing whisk together the rest of the ingredients in a small bowl and add to vegetables. Toss well to mix. Allow to sit for about 30 minutes before serving.
Note
Can be made several hours ahead of time and kept in the refrigerator until ready to serve.
If you’re using dried mint cut the amount to 1 tsp of dried mint. There’s not much honey in the dressing but if you want to cut the carbs even lower you can substitute with a zero carb sweetener of your choice.
