I love sweet potatoes. I usually just pop some in the oven and bake them. Add a little butter and a little cinnamon and I’m good. But sometimes that can get a little boring, so I try to find different ways to serve them. One of my favorite ways is to make these awesome but simple patties that are pan fried in a little bit of oil. They go well with just about any main entrée such as roast chicken, with steak instead of fries, or with BBQ spareribs.
Ingredients
1 pound of sweet potatoes (about 1 large)
1/4 yellow or white onions finely chopped
2 tbs dried onion flakes (optional but it’s great)
3 tbs cassava flour (or 2 tbs arrowroot flour as substitute)
Salt and pepper to taste
1/2 tsp Ancho chili powder (or regular chili powder}
A couple dashes of cayenne powder (optional)
2 whole eggs
1/4 light olive oil (any light tasting oil)
Directions
Peel and grate with medium size hole grater the potatoes into a large bowl. Add in the chopped onions, the dried onion, the cassava flour and the rest of the seasonings. Toss to mix well. Add in the eggs and mix well to combine. Heat a flat-bottomed pan over medium high heat. Then add in the oil and heat until fairly hot. Using a large spoon add a dollop of the potato mixture into the oil, use back of spoon to flatten a bit.
Continue with the rest of the potato mixture. Do not crowd the pan so you may have to do in batches if you have a smaller pan. Should make about 6 patties around 3-inch diameter. Serves 2. Recipe can be doubled or tripled.
